This unbreaded chicken Parmesan pairs golden chicken, tomato sauce and melted cheese with green beans. There is no breading, so you can get dinner on the table without coating each piece.
Tips for unbreaded chicken parmesan
Cut the chicken into four evenly thick pieces, about ½ inch thick, so they cook at a similar rate. The weight is raw chicken before cooking. Use a large oven-safe skillet, or transfer the chicken to a baking dish before adding the sauce and cheese.
Helpful equipment: An instant-read thermometer helps check the thickest part of the chicken. The linked model may differ from the one used in our kitchen.

Unbreaded Chicken Parmesan with Green Beans
Ingredients
- 1 1/2 lb boneless skinless chicken breast raw
- 1 lb green beans trimmed
- 1 cup marinara sauce
- 4 oz part-skim mozzarella shredded
- 2 tbsp grated Parmesan
- 1 tbsp olive oil
- 1 tsp Italian seasoning
- 1/2 tsp garlic powder
- 1/4 tsp salt
- 1/4 tsp black pepper
Instructions
- Heat the oven to 400°F. Bring a covered saucepan of water to a boil for the green beans.
- Slice or pound the chicken to roughly 1/2-inch thickness, making four portions. Season with Italian seasoning, garlic powder, salt and pepper.
- Heat the oil in a large oven-safe skillet over medium heat. Cook chicken 3–4 minutes per side until lightly browned.
- Spoon marinara evenly over the chicken. Top with mozzarella and Parmesan. Transfer the skillet to the oven, or move everything to an oven-safe baking dish. Bake for 8–12 minutes, until the thickest part of every piece reaches 165°F and the cheese melts. Timing depends on thickness.
- While the chicken bakes, boil the green beans for 4–6 minutes until tender to your liking; drain. Divide the chicken, sauce, cheese and beans evenly among four plates.
Storage and meal prep
Refrigerate leftovers in shallow covered containers within 2 hours, or within 1 hour if the temperature is above 90°F. Keep refrigerated at 40°F or below and use within 3–4 days. Reheat chicken and beans to 165°F. See our meal prep guide for more practical storage tips.
Ingredient notes
Choose a marinara you enjoy and check its label: sauces differ in sugar, oil and salt. Frozen green beans can work; cook them according to their package and adjust the timing. Swapping cheese, sauce or bean quantities changes the nutrition estimate.
