High Protein Strawberry Overnight Oats

Mix these oats before bed and breakfast is waiting in the fridge. Greek yogurt adds protein and keeps them creamy, while strawberries give them some sweetness without protein powder.

Ingredients

  • 2 cups old-fashioned rolled oats not steel-cut
  • 3 1/2 cups plain nonfat Greek yogurt
  • 1 cup 2% milk
  • 2 cups strawberries washed, hulled and chopped

Instructions

  • Stir the oats, yogurt and milk in a large bowl until no dry pockets remain. Scrape the bottom of the bowl so the oats are evenly mixed.
  • Divide the oat mixture equally among four containers. Add 1/2 cup strawberries to each jar. Stir them in or keep separate until morning if you prefer firmer fruit.
  • Cover and refrigerate at 40°F or below for at least 8 hours. This timing lets rolled oats soften; it is not a shelf-stable preparation.
  • Stir before eating and serve cold. The mixture will be thick. A splash of milk can loosen it, but that extra milk is not included in the estimate. One serving is one full jar, including its strawberries.

Notes

Four jars; each contains one-quarter of every listed ingredient (about 376 g before soaking). No optional sweetener included. Keep covered in the refrigerator for up to 3 days as a conservative development plan. For breakfasts later in the week, mix a second batch rather than storing seven jars at once. Freezing is not recommended until texture has been checked. Do not leave the dairy mixture out longer than 2 hours, or 1 hour above 90°F. There is no reheating step. Nutrition is estimated and varies with brands and portions. This recipe has not been kitchen tested.
